HOW TO MAKE WINE: Wine is made by crushing grapes to extract the juice, which is allowed to ferment. During fermentation the grape sugar turns into alcohol and the juice becomes wine. Wines from Tuscany are made by a secular experienced treatment of selected vines. Wine may be: red - white - pink in colour. If the meal is an informal one, one wine only is usually served. However it should be chosen with care to complement all the dishes of meal. On special or formal occasions, when a different wine is drunk with each course, there is a definite order of serving. A white wine should precede a real one, a young wine should come before an old one, fish should be accompanied by medium dry or dry white wine, heavier and sweeter wine should be served at the dessert. |
